Texas Peach Cobbler

Ingredients

  • 6 cups sliced peaches (fresh Texas peaches or thawed frozen)
  • 2 cups sugar, divided
  • 1 tbsp lemon juice
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup butter
  • 1 tsp cinnamon

Method

  1. Heat the oven to 350°F. Toss the peaches with 1 cup sugar and the lemon juice; let macerate.
  2. Melt the butter in a 9×13 dish in the oven.
  3. Whisk the flour, remaining 1 cup sugar, baking powder, salt, and milk into a batter; pour over the melted butter (don’t stir).
  4. Spoon the peaches over the batter and sprinkle with cinnamon.
  5. Bake 40–45 minutes until the crust rises golden around the fruit. Serve warm with ice cream.
