Texas Peach Cobbler
Ripe Hill Country peaches bubbling under a golden, buttery crust — summer in a baking dish.
Ingredients
- 6 cups sliced peaches (fresh Texas peaches or thawed frozen)
- 2 cups sugar, divided
- 1 tbsp lemon juice
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup butter
- 1 tsp cinnamon
Method
- Heat the oven to 350°F. Toss the peaches with 1 cup sugar and the lemon juice; let macerate.
- Melt the butter in a 9×13 dish in the oven.
- Whisk the flour, remaining 1 cup sugar, baking powder, salt, and milk into a batter; pour over the melted butter (don’t stir).
- Spoon the peaches over the batter and sprinkle with cinnamon.
- Bake 40–45 minutes until the crust rises golden around the fruit. Serve warm with ice cream.
