Texas Peach Bellini
Ripe Texas peach purée topped with sparkling wine — a brunch and celebration pour that practically makes itself.
Ingredients
- 2 ripe Texas peaches, peeled (or 1 cup peach purée)
- 1 tbsp honey
- 1 tsp lemon juice
- 1 bottle chilled prosecco or sparkling wine
Method
- Blend the peaches with the honey and lemon juice until smooth; strain for a silkier pour.
- Spoon a few tablespoons of purée into each flute.
- Top slowly with prosecco, stir gently, and serve.
