Tex-Mex Migas
Soft scrambled eggs with crispy tortilla strips, peppers, and cheese — a Texas breakfast scramble.
Ingredients
- 8 eggs, beaten
- 4 corn tortillas, cut in strips
- 1/2 onion and 1/2 bell pepper, diced
- 1 jalapeño, minced
- 1 tomato, diced
- 1 cup shredded cheese
- Oil and salt
- Warm tortillas and salsa, for serving
Method
- Fry the tortilla strips in a little oil until crisp; reserve some for topping.
- Soften the onion, pepper, and jalapeño; add the tomato.
- Pour in the beaten eggs and the fried strips and soft-scramble.
- Off the heat, fold in the cheese.
- Top with the reserved crisp strips and serve with salsa and warm tortillas.
Crispy tortilla strips folded into the eggs are the whole point.
