Tex-Mex Migas

Soft scrambled eggs with crispy tortilla strips, peppers, and cheese — a Texas breakfast scramble.

Ingredients

  • 8 eggs, beaten
  • 4 corn tortillas, cut in strips
  • 1/2 onion and 1/2 bell pepper, diced
  • 1 jalapeño, minced
  • 1 tomato, diced
  • 1 cup shredded cheese
  • Oil and salt
  • Warm tortillas and salsa, for serving

Method

  1. Fry the tortilla strips in a little oil until crisp; reserve some for topping.
  2. Soften the onion, pepper, and jalapeño; add the tomato.
  3. Pour in the beaten eggs and the fried strips and soft-scramble.
  4. Off the heat, fold in the cheese.
  5. Top with the reserved crisp strips and serve with salsa and warm tortillas.

Crispy tortilla strips folded into the eggs are the whole point.
