Tex-Mex Crawfish Enchiladas
Gulf crawfish rolled in corn tortillas under bubbling cheese and Tex-Mex sauce — a crowd-favorite main from our Coastal Comfort menu.
Ingredients
- 1 lb crawfish tails
- 8 corn tortillas
- 2 cups Tex-Mex sauce
- 1 cup shredded cheese
- Cooked rice and beans, for serving
Method
- Preheat the oven to 350°F (175°C).
- Fill each tortilla with crawfish, roll, and place in a baking dish.
- Pour the Tex-Mex sauce over the tortillas and top with cheese.
- Bake for 20 minutes until the cheese is bubbly.
- Serve with rice and beans.
