Tex-Mex Crawfish Enchiladas

Ingredients

  • 1 lb crawfish tails
  • 8 corn tortillas
  • 2 cups Tex-Mex sauce
  • 1 cup shredded cheese
  • Cooked rice and beans, for serving

Method

  1. Preheat the oven to 350°F (175°C).
  2. Fill each tortilla with crawfish, roll, and place in a baking dish.
  3. Pour the Tex-Mex sauce over the tortillas and top with cheese.
  4. Bake for 20 minutes until the cheese is bubbly.
  5. Serve with rice and beans.
