Southern Cheese Grits

Creamy stone-ground grits folded with sharp cheddar — the perfect bed for our blackened fish and shrimp.

Ingredients

  • 1 cup stone-ground grits
  • 4 cups water or stock
  • 1 tsp salt
  • 2 tbsp butter
  • 1 cup shredded sharp cheddar
  • 1/4 cup cream (optional)

Method

  1. Bring the water and salt to a boil.
  2. Whisk in the grits, reduce to low, and simmer, stirring often, 20–25 minutes until creamy.
  3. Stir in the butter, cheddar, and cream until smooth.
  4. Season to taste and serve hot.

The pairing for blackened catfish, red drum, or Gulf shrimp.
