Southern Cheese Grits
Creamy stone-ground grits folded with sharp cheddar — the perfect bed for our blackened fish and shrimp.
Ingredients
- 1 cup stone-ground grits
- 4 cups water or stock
- 1 tsp salt
- 2 tbsp butter
- 1 cup shredded sharp cheddar
- 1/4 cup cream (optional)
Method
- Bring the water and salt to a boil.
- Whisk in the grits, reduce to low, and simmer, stirring often, 20–25 minutes until creamy.
- Stir in the butter, cheddar, and cream until smooth.
- Season to taste and serve hot.
The pairing for blackened catfish, red drum, or Gulf shrimp.
