Shrimp Scampi
Gulf shrimp in a garlicky white wine and lemon butter, tossed with linguine — quick, bright, and elegant.
Ingredients
- 1 lb large shrimp, peeled
- 1 lb linguine
- 4 tbsp butter and 2 tbsp olive oil
- 5 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1/4 cup chopped parsley
- Salt
Method
- Cook the linguine until al dente.
- Sauté the garlic and pepper flakes in the butter and oil for 1 minute.
- Add the shrimp and cook about 2 minutes per side until pink.
- Add the wine and lemon and simmer 2 minutes.
- Toss with the pasta and parsley, season, and serve.
Don’t let the garlic brown — gold and fragrant is the goal.
