Shrimp Scampi

Gulf shrimp in a garlicky white wine and lemon butter, tossed with linguine — quick, bright, and elegant.

Ingredients

  • 1 lb large shrimp, peeled
  • 1 lb linguine
  • 4 tbsp butter and 2 tbsp olive oil
  • 5 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • 1/4 cup chopped parsley
  • Salt

Method

  1. Cook the linguine until al dente.
  2. Sauté the garlic and pepper flakes in the butter and oil for 1 minute.
  3. Add the shrimp and cook about 2 minutes per side until pink.
  4. Add the wine and lemon and simmer 2 minutes.
  5. Toss with the pasta and parsley, season, and serve.

Don’t let the garlic brown — gold and fragrant is the goal.
