Shrimp Ceviche Tostaditas

Lime-cured Gulf shrimp with tomato, onion, and cilantro on crisp mini tostadas — a bright passed bite from our Island Fusion menu.

Ingredients

  • 1 lb Gulf shrimp, peeled and deveined
  • 1/2 cup lime juice
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Mini corn tostadas

Method

  1. Dice the shrimp and marinate in lime juice for 1 hour until opaque.
  2. Drain the shrimp and mix with the tomato, onion, and cilantro.
  3. Spoon the ceviche onto the tostadas and serve immediately.
