Shrimp Ceviche Tostaditas
Lime-cured Gulf shrimp with tomato, onion, and cilantro on crisp mini tostadas — a bright passed bite from our Island Fusion menu.
Ingredients
- 1 lb Gulf shrimp, peeled and deveined
- 1/2 cup lime juice
- 1 tomato, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- Mini corn tostadas
Method
- Dice the shrimp and marinate in lime juice for 1 hour until opaque.
- Drain the shrimp and mix with the tomato, onion, and cilantro.
- Spoon the ceviche onto the tostadas and serve immediately.
