Prickly Pear Cheesecake
A blush-pink prickly pear cheesecake on a graham crust — the showstopping finish to our Island Fusion menu.
Ingredients
- 1 1/2 cups cream cheese
- 1 cup prickly pear puree
- 1/2 cup sugar
- 2 eggs
- 1 graham cracker crust
Method
- Preheat the oven to 325°F (160°C).
- Beat the cream cheese, prickly pear puree, sugar, and eggs until smooth.
- Pour into the crust and bake for 45 minutes until set.
- Chill before serving.
