Pimento Cheese

The "caviar of the South" — sharp cheddar, pimentos, and a little heat. A grazing-board essential.

Ingredients

  • 8 oz sharp cheddar, freshly grated
  • 4 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup diced pimentos (or roasted red pepper), drained
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Pinch of cayenne
  • Salt and pepper, to taste
  • Crackers or baguette, for serving

Method

  1. Stir the cream cheese and mayonnaise until smooth.
  2. Fold in the cheddar, pimentos, garlic powder, paprika, and cayenne.
  3. Season with salt and pepper.
  4. Chill at least 1 hour. Serve at room temperature with crackers or crostini.

Grate the cheese fresh — pre-shredded won’t bind the same. Great as a spread or sandwich filling, too.
