Pimento Cheese
The "caviar of the South" — sharp cheddar, pimentos, and a little heat. A grazing-board essential.
Ingredients
- 8 oz sharp cheddar, freshly grated
- 4 oz cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup diced pimentos (or roasted red pepper), drained
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Pinch of cayenne
- Salt and pepper, to taste
- Crackers or baguette, for serving
Method
- Stir the cream cheese and mayonnaise until smooth.
- Fold in the cheddar, pimentos, garlic powder, paprika, and cayenne.
- Season with salt and pepper.
- Chill at least 1 hour. Serve at room temperature with crackers or crostini.
Grate the cheese fresh — pre-shredded won’t bind the same. Great as a spread or sandwich filling, too.
