Classic Caesar Salad
Crisp romaine in a garlicky, anchovy-rich dressing with shaved Parmesan and croutons — a reliable crowd-pleaser.
Ingredients
- 3 romaine hearts, chopped
- 1 cup croutons
- 1/2 cup shaved Parmesan
- Dressing: 1/2 cup mayonnaise, 2 anchovy fillets minced, 1 garlic clove minced, 2 tbsp lemon juice, 1 tsp Dijon, 1 tsp Worcestershire, 1/3 cup grated Parmesan, 1/4 cup olive oil, black pepper
Method
- Whisk the anchovies, garlic, lemon juice, Dijon, Worcestershire, and mayonnaise.
- Whisk in the grated Parmesan and olive oil; season with black pepper.
- Toss the romaine with just enough dressing to coat.
- Top with croutons and shaved Parmesan and serve immediately.
