Classic Caesar Salad

Ingredients

  • 3 romaine hearts, chopped
  • 1 cup croutons
  • 1/2 cup shaved Parmesan
  • Dressing: 1/2 cup mayonnaise, 2 anchovy fillets minced, 1 garlic clove minced, 2 tbsp lemon juice, 1 tsp Dijon, 1 tsp Worcestershire, 1/3 cup grated Parmesan, 1/4 cup olive oil, black pepper

Method

  1. Whisk the anchovies, garlic, lemon juice, Dijon, Worcestershire, and mayonnaise.
  2. Whisk in the grated Parmesan and olive oil; season with black pepper.
  3. Toss the romaine with just enough dressing to coat.
  4. Top with croutons and shaved Parmesan and serve immediately.

Dress it just before serving so the romaine stays crisp.
