Caprese Salad

Ripe tomatoes, fresh mozzarella, and basil with good olive oil and balsamic — summer on a platter.

Ingredients

  • 1.5 lbs ripe tomatoes, sliced
  • 1 lb fresh mozzarella, sliced
  • 1 cup fresh basil leaves
  • 3 tbsp extra-virgin olive oil
  • Aged balsamic vinegar
  • Flaky salt and black pepper

Method

  1. Alternate tomato and mozzarella slices on a platter, tucking basil leaves between.
  2. Drizzle with olive oil and a little aged balsamic.
  3. Finish with flaky salt and freshly ground pepper. Serve at room temperature.

Only worth making with peak-season tomatoes and good mozzarella.
