Tex-Mex Breakfast Burritos

Ingredients

  • 8 large flour tortillas
  • 10 eggs, beaten
  • 1 lb breakfast sausage or chorizo
  • 4 cups diced potatoes or hash browns
  • 1.5 cups shredded cheddar
  • Salt and pepper
  • Salsa, for serving

Method

  1. Crisp the potatoes in a skillet; season and set aside.
  2. Brown the sausage and drain.
  3. Soft-scramble the eggs in butter.
  4. Warm the tortillas, then fill each with potatoes, sausage, eggs, and cheese.
  5. Roll up tightly, tucking the ends. Serve with salsa (or wrap and freeze; reheat at 350°F).
