Tex-Mex Breakfast Burritos
Egg, sausage, crispy potato, and cheese rolled in a warm flour tortilla — our go-to for brunches and morning meetings.
Ingredients
- 8 large flour tortillas
- 10 eggs, beaten
- 1 lb breakfast sausage or chorizo
- 4 cups diced potatoes or hash browns
- 1.5 cups shredded cheddar
- Salt and pepper
- Salsa, for serving
Method
- Crisp the potatoes in a skillet; season and set aside.
- Brown the sausage and drain.
- Soft-scramble the eggs in butter.
- Warm the tortillas, then fill each with potatoes, sausage, eggs, and cheese.
- Roll up tightly, tucking the ends. Serve with salsa (or wrap and freeze; reheat at 350°F).
