Austin-Style Breakfast Tacos

Eggs, chorizo, crispy potato, and cheese folded in a warm tortilla — the Texas breakfast.

Ingredients

  • 8 flour or corn tortillas
  • 8 eggs, beaten
  • 1/2 lb chorizo or breakfast sausage (or bacon)
  • 2 potatoes, diced
  • 1 cup shredded cheese
  • Salsa and cilantro, for serving
  • Oil

Method

  1. Crisp the diced potatoes in a little oil; season and set aside.
  2. Brown the chorizo and drain.
  3. Soft-scramble the eggs in butter.
  4. Warm the tortillas, then fill with eggs, chorizo, potato, and cheese.
  5. Top with salsa and cilantro, fold, and serve.

Set the fillings out and let guests build their own — a brunch crowd favorite.
