Austin-Style Breakfast Tacos
Eggs, chorizo, crispy potato, and cheese folded in a warm tortilla — the Texas breakfast.
Ingredients
- 8 flour or corn tortillas
- 8 eggs, beaten
- 1/2 lb chorizo or breakfast sausage (or bacon)
- 2 potatoes, diced
- 1 cup shredded cheese
- Salsa and cilantro, for serving
- Oil
Method
- Crisp the diced potatoes in a little oil; season and set aside.
- Brown the chorizo and drain.
- Soft-scramble the eggs in butter.
- Warm the tortillas, then fill with eggs, chorizo, potato, and cheese.
- Top with salsa and cilantro, fold, and serve.
Set the fillings out and let guests build their own — a brunch crowd favorite.
