Classic chateaubriand sauce: A rich and flavorful sauce made with shallots, beef stock, white wine, and tarragon.
Bearnaise sauce: A creamy and flavorful sauce made with egg yolks, tarragon, and white wine vinegar.
Demi-glace: A rich and flavorful sauce made with beef stock, red wine, and demi-glaze.

8 oz. center-cut filet mignon, pan-seared and coated in a crust of cracked black peppercorns. Served with a rich and creamy Cognac peppercorn sauce
